Grind the flaked coconut as fine as possible in a blender or food processor and set aside. Commercial
grated coconut comes in quite large flakes. If it were mixed directly into the dough without first being
ground fine, it would tend to obscure details of the molded cookies. Cream the butter and sugar together. Stir in the eggs and the vanilla. Stir in the ground coconut. Mix the salt with the flour, then mix the flour into the dough. Knead the dough well for a couple of minutes. Chill the dough for about 20 minutes, before forming cookies. Bake the cookies at 350 degrees until the edges start to brown.
