12 Egg whites, beaten until frothy Oil 1/2 cup Nonfat sour cream 1 cup Nonfat cheddar cheese 1/2 cup Refried beans 4 Nonfat flour tortillas, Burrito size 2 tablespoons Chopped cilantro 1 cup Salsa 2 tablespoons Chopped green onions
Scramble egg whites in a nonstick pan lightly coated with oil. Combine eggs with sour cream and cheese. Spread beans on each tortilla. Sprinkle with cilantro. Spoon the egg mixture on top in the center of the tortilla. Fold in sides and roll up each tortilla. Microwave for 30 seconds. Put salsa on top and sprinkle with remaining cilantro and onions. Serve with extra salsa and nonfat sour cream on the side.
